Rezept: Finnisches Roggenbrot

Kurzbeschreibung:
Wird mit einem Loch in der Mitte hergestellt, damit man es zur Lagerung unter die Decke hängen kann. Melasse gibt im Gegensatz zu Zuckerrübensirup einen etwas “brandig” Geschmack.

Zubereitung
Für den Vorteig:
Den Zuckerrübensirup mit der Hefe in lauwarmem Wasser auflösen.

Das Knäckebrot (alternativ geht auch Pumpernickel) fein zerbröseln und mit dem Roggenmehl in einer Schüssel vermischen. Über Nacht mit einem Geschirrtuch abgedeckt an einem warmen (20-25 °C) Ort ruhen lassen. Achtung auf einem Kamin kann es schnell zu warm sein, der Vorteig trocknet dann in der Schüssel sehr an.

Das Brot:
Am nächsten Tag den Zuckerrübensirup mit der Hefe in wenig lauwarmem Wasser auflösen und zum Vorteig hinzugeben. Mit dem Roggenmehl und Salz (falls gewünscht etwas Fett) zu einem glatten Teig verarbeiten.
An einem warmen Ort aufgehen lassen, dauert 2-3 Stunden.

Der Teig wird nicht so fest, dass man ihn ausrollen könnte. Er lässt sich mit dem Teigschaber, einem breiten Messer oder feuchten Händen auf ein mit z.B. Backpapier ausgelegtes Backblech streichen, so dünn wie möglich und nochmals Gehen lassen. Die Menge sollte für 2 Bachbleche reichen. Mit einem Messerrücken die gewünschte „Stückgröße“ eindrücken. Die Oberfläche mit einer Gabel einstechen. Beide Bleche bei auf 175°C vorgeheizten Herd auf Umluft etwa 35 Minuten backen. Nacheinander gebacken ist Ober- und Unterhitze besser, dann jeweils ca. eine knappe halbe Tasse Wasser in den Ofen geben.
Sobald das Brot aus dem Ofen kommt, auf ein Gitter oder eine andere glatte Fläche stürzen, Backpapier von hinten abziehen und in die vorgeformten Stücke brechen.
